1/2 cup fat free milk
1-1/4 cups soft bread crumbs
1/2 cup finely chopped pecans
1/4 cup grated Parmesan cheese
3 tsp dried oregano
3 tsp dried basil
1 tsp garlic powder
4 boneless skinless chicken breast halves (4 oz. each)
2 tsp canola oil
1. Place milk in a shallow bowl. In another shallow bowl, combine the bread crumbs, pecans, cheese, and seasonings. Dip chicken in milk, then roll in crumb mixture. In a large nonstick skillet, brown chicken in oil.
2. Transfer to a baking sheet coated with cooking spray. Bake, uncovered at 350 degrees for 20-25 minutes or until a meat thermometer reads 170 degrees.
Nutrion Facts: 1 chicken breast half equals 229 calories, 11 g fat (2 g saturated fat), 65 mg cholesterol, 143 mg sodium, 6g carbohydrate, 1 g fiber, 25 g protein
I got the recipe out of my healthy cooking magazine. I recommend adding mushrooms. They really pick up the flavors and were really yummy. I think next time I would add some rosemary to enhance the flavor.
